Everything except grab is blockable. Once you recognize what move is coming and how much time you have before it hits you if you time it just when the attack is about to hit you'll execute a perfect block. Sometimes even if you time it perfectly you'll still fail to perfect block, thats because your shield has too low of a blocking ability.
